Do they "accept bitcoin" in the way that many big services do, where they get their payment out of bitcoin and into cash as soon as possible?

It's a shame they do not accept bitcoin..

Did you read my post? Bitpay converts bitcoin to the fiat currency of your choice. It is hassle free and much cheaper than credit cards.

To be able to use BTC at merchants who don't want to deal with BTC? Like, buying groceries?

Bitcoin transaction fees are around $0.40 to get your transaction accepted. While you could pay with no fee, it could take days for the transaction to be accepted. Maybe one of the altcoins would work better. But now you are limiting your customer base to people who have altcoins, which must be a pretty small market.

They actually do accept bitcoin.

just use bitcoin. there is literally no downside. it is easier to implement than most payment providers that i know. moreover there are payment provider that work with bitcoin so you do not have to.

That assumes that someone is willing to accept Bitcoins as a payment.
