Which applications can't you remove?
Some apps can only be disabled, but not deleted.It's basically forced marketing.
Are they removing the app from peoples' phones too?
This is not trivial and is not akin to simply uninstalling an app (coming from a google-free Android user on a pixel).
I have not had this experience, and I sideload a lot of apps. What sideloaded apps has it offered to remove?

Couldn't you just not install those apps you don't want?

Then uninstall the app, nobody's forcing you to keep it.
