I'd suggest Basilisk II and emulate the mac in that. This would also let you use modern hardware. Especially useful when copying / porting to something more modern.

You could try MorphOS or AROS, which turn your (old) Mac and others into Amigas
I've had the most luck with Mini vMac. Shoot me an email if you need a bootable image, I have one for System 6 and System 7.
