Definitely try Notepad++ as a replacement for notepad.exe. It will even autosave your unsaved notes. And it has tabs.

I found Notepad Next. It doesn't have all Notepad++ features I use but it is pretty good.

I can understand why notepad is simple. You can easily install alternatives, like notepad++.
