EverNote is neat for what you're trying to do.
how is this better than evernote?
Simplenote, works best for me. No nonsense approach to notes. Just text, nothing else.
Personally NVAlt is the only note app I use (and SimpleNote on iOS) It's all synced, easily searchable, it's my universal scratch pad.
Seconding simplenote. Works across platforms (macos and android for me) plus web. Doesn't do anything clever, other than markdown integration and basic tagging, but what it does works well.
why don't compare it to the built-in Notes or Evernote :)
Note taking done right. Android, iOS, Desktop, Markdown & HTML, easy flat file format, Web clipper, offline and do this all without wasting whitespace (no doc editor like Evernote) and good sync and instant search results. <- NO ONE is doing this! Closest is maybe Google Keep (seriously it's good at some points I'm mentioning).
Looks nice and sleek. How is this different than evernote?
Supernote seems a promising option which you didn't enumerate.
Is evernote not a good replacement? OCR searching in notes etc
