there are cameras that do this; there are many UVC USB3 webcams with phone-grade sensors (medium quality).
The device needs to support usb webcams. I don't know if any iphone does that.

What is the advantage of a mirrorless camera in the webcam use case ?
Have you considered getting a ZV-E10 for this? That’s one of the smaller sony mirrorless cameras which behaves like any other webcam via USB, so it'd be just as simple to use as any other webcam.
I used Logitech C922. The image quality was really bad. Now using Sony A6000 + Elgato HD60 S plus. It's an expensive setup but works great.
