Your ignoring the other things you get from the app store. You need to compare the 30% cut apple takes off the top to the possible increased volume of sales, the money saved from not having to host the app yourself or having to run your own payment system. Apple is not just taking 30% off the top to just to be greedy, it is more of a payment for the service they are providing.
30% is almost 1/3 of the app price! It is higher than income tax in most countries. It is stealing money from developers because their app is not successful due to being released on App Store, it is successful because it is a great product and people would buy it on whatever store it would be available. Developers were just unable to publish it in another store or use a different payment processor with lower fees.

The AppStore isn't just a payment gateway. It's essentially a retail store. You would be hard pressed to get to keep 70% from many other retailers.
Apple wants a 30% on fees, not the good itself. This is consistent with the rest of their policies. Arguably that still isn't ok, but this is not an encroachment.
