What you're missing is nobody serious uses anything but docx.
The format didn't need to be reversed, it's (almost) open. Additionally there are plugins for the older versions of Office to let them work with the newer format, and it's much much easier to write tools to do things with Word files now - just crack one open and take a look (it's a .zip file full of XML files).
Document formats don't seem to be a problem any more. Back when MS switched to .docx people I knew continued using .doc to maintain compatibilty with old versions. I actually got support for the 2007 formats before most of my windows using friends. As long as you change your default file format to the MS one, I don't think you'll run into issues on that front.
My experience is that open-source implementations like LibreOffice have much better support for the older file formats. docx/xlsx/etc may be a "zip of XML files" but it doesn't really matter if the original data is stored as XML or a blob when it comes to the end user's rendering experience -- it's about how the system can interpret that data. And the interpretations of the new file formats are mostly severely lacking.
OOXML. It's open! It's XML! That's like twice as universally compatible! /s
ODF - Open document format, it is not perfect but a lot better than Microsofts formats.

OnlyOffice have shot themselves in the foot when made it use MSO file format to store data. Should have build on ODT
