One thing that affected me was drinking coffee through the day, and then stopping in mid-afternoon, I found that from around 8PM to midnight that left me in sort of a zombie state. I eliminated caffeine for a few months and now I consume a smaller amount.

I've got a Moccamaster that happily brews 10 cups and was drinking it 16oz at a time. There were plenty of days where I would need to run the Moccamaster multiple times. I had headaches and I wasn't as snappy as before for a few weeks, but now I feel much better.I still drink coffee some times, but if I have one I have trouble sleeping that night. 2 years ago, I was drinking 12 cups of coffee on an average day. More than that on days when I had night shifts. For some unknown reason I suddenly started reacting weirdly to all the caffeine. Somehow it sparked anxiousness in me. Seriously, try 1-2 weeks without coffee... you'll feel it.
I just stopped drinking coffee. The first 2 weeks were awful. I was tired all the time and sleeping over 10 hours every night. After that I returned to my usual 7 hour sleep but I had no more issues getting to sleep. My performance is the same as it was when drinking coffee, I sleep well, and if I ever need a boost, a single ristretto will give me lots of energy! :D
I quit caffeine cold turkey more than a year ago. I rarely drank soda and energy drinks before so most of the caffeine intake was through coffee. The first four months were the worst because of brain fog. But it also made me aware how badly addicted I was to caffeine!
Try tea instead of coffee, sounds like you're just taking too much caffeine
