Perhaps OP means the games themselves are not open-source?
Fully opensource the game is not probable, if the engine they build is so easy, then you could have a chance to reimplement the engine. The optimal solution would be a bunch of binaries that run without assets an ask the users to provide the path where the original game is to use the assets.

More games should be open source like doom. It doesnt effect the art assets which are still copyrighted.
The code and logic of games can be open source (look at Dwarf Fortress or ports of Doom) while the assets are still closed source. The bigger fear I always see is that someone will steal the code and run it without paying. In reality, this almost never happens. People don't care enough to run their own version of the game, or any other software.

Is there a compilation of all the games that were open sourced?
Only the code is being open sourced. I presume this means that the graphics, sounds and other resources will stay closed. Thus, if you want the games, you will need to buy them.

I've seen other devs open source their games and simply release it in a non-functional state with statements clarifying what's not included, why, and what it would take to get things up and running. Just about anyone looking to build a modern game from this sort of source release is going to know what they are getting into with or without these assets and may still get value out of the release even if it doesn't provide all the necessary bits to create an executable.
